My hubby's sister and her family moved into their new home this past spring and the family who owned the home they bought, had chickens. This family was not able to keep them, so my sister-in-law and her family adopted them.
Every once in a while we get to bring home a few sorta farm fresh eggs. I say sorta because my in-laws don't live on a farm. They just have a chicken coop in their backyard. I personally like the name "Farm-fresh eggs" over "Backyard-fresh eggs".

As long as they are not washed, hand picked eggs can sit on the counter top for a couple months until you are ready to use them.
Ours sit in a bowl & I clean them right before using.
There are varying opinions about how to clean just hatched eggs - wash, don't wash, refrigerate, or not, etc.
According to one website, before you submerge the freshly collected eggs in ice water, wait! Cold water actually causes the pores in an eggshell to pull bacteria from the surface in through the shell and into the egg, where you don't want it. What's more, unwashed eggs have a natural antibacterial coating called bloom. As you can see, these just collected eggs are mostly clean. A couple had some, ahem.... stuff (droppings) on them but they will clean up easily enough.
